Level 1 · Lesson 4

Cross-contamination

Bacteria and allergens do not move on their own. They are carried, by hands, by equipment, and by everything in between.
One knife. Two jobs. It cuts raw chicken, and then without a wash it slices tomatoes for a salad.
Raw chicken
No wash
Salad
In two seconds the bacteria moved. That is cross-contamination.
Why it is so dangerous

Ready-to-eat food never gets a second chance

Raw chicken Cooked Customer Bacteria destroyed
by the cooking step
Salad, contaminated Served Customer Nothing kills them
on the way
Cooking rescues most bacterial contamination. Anything eaten without further cooking has no rescue step, so your handling is the last control.
How it travels

Four routes, and you will see them everywhere

Hands
Moving between jobs without a wash, or without a glove change
Equipment and utensils
Knives, boards, slicers, mixers, probes
Direct contact
Raw food touching or dripping onto other food
Cloths and surfaces
One cloth wiping the whole kitchen
It also carries allergens, not only bacteria. A utensil that stirred a peanut sauce contaminates the next dish it touches.
Your turn

What would you do?

You have just used the red board and a knife for raw chicken. The board goes into the wash. You rinse the knife under the hot tap, pick up a clean yellow board, and start slicing cooked ham.

Correct

Raw meat
Raw meat drips. Put it at the bottom and those drips land on nothing. Put it anywhere else and gravity does the contaminating for you.

Separation

Colour coding keeps raw and ready-to-eat apart

Red is raw meat almost everywhere. The rest of the scheme varies between sites, and the same idea runs through production as dedicated tools and equipment for each area. Learn the system where you work.
Gloves

A gloved hand is still a hand

A false sense of safety

  • Wearing gloves does not stop cross-contamination on its own
  • The same gloves used on raw chicken then a salad carry bacteria across, exactly like the rinsed knife
  • Gloves that are not changed spread contamination as fast as bare hands

Change at the boundary

  • Put on a fresh pair whenever you cross from raw to ready to eat, or between tasks
  • Wash your hands before the new pair goes on
  • It is the same rule as separate boards and clean utensils, applied to your hands
In production it is formalised, with gloves colour coded by area in the same way boards are, so a raw area glove never reaches a ready to eat line.
Prevention

Four habits that close all four routes

Cross-contamination is invisible and it is fast. Every one of these habits stops it before it starts.

The six things to remember

1Cross-contamination is the transfer of bacteria or allergens from one item to another
2It travels by hands, equipment and utensils, direct contact, and cloths and surfaces
3Store raw meat at the bottom of the fridge, below ready-to-eat food, so drips land on nothing
4Use colour-coded boards and equipment, with red for raw meat
5A gloved hand is still a hand: change gloves at the raw to ready-to-eat boundary and between tasks
6Wash hands between tasks, separate equipment, clean and disinfect, and never use one cloth for everything
