Level 1 · Lesson 7

Fitness to work

You can follow every other rule in this course perfectly and still make people ill, if you handle food while you are carrying an illness.
Six in the morning. Your stomach has been in bits all night. Your shift starts in two hours, the rota is already short, and you could probably push through.
Go in anyway
Nobody wants to leave the team short
?
Call your supervisor
And stay away from open food
Some days the safest thing you can do for the food is stay well away from it.
The rule

Diarrhoea or vomiting means no open food

Open food

  • Anything not sealed inside its packaging
  • Ingredients, prep, plated dishes, anything on a line before it is sealed
  • Also equipment and surfaces that touch food
  • This is almost everything a food handler does

Sealed food

  • Product already closed inside its packaging
  • Your supervisor decides what work, if any, is suitable
  • Never assume a job is safe because the food looks wrapped
The bugs that cause diarrhoea and vomiting are the same ones that cause food poisoning, and they pass on very easily. This matters even more in a care home, a hospital kitchen, or a production run feeding thousands.
The 48 hour rule

Feeling better is not the same as being clear

SYMPTOMS No open food Symptoms stop 48 HOURS Still no open food You feel fine here, and you can still spread it 48 hours clear BACK TO WORK Open food again
You can still be carrying and passing on the illness for a day or two after you feel completely normal. Two clear days after the symptoms stop, then you are good to return.
Try it

When can you go back?

You were ill on Monday evening and the symptoms stopped on Tuesday morning. Tap the point you think you could go back to handling open food.

48 hours · you feel fine and can still spread it Symptoms stop 48 hours clear
The clock does not start when you feel better. It starts when the symptoms stop.
Why the rule is written in hours

Your turn

What would you do?

You were vomiting yesterday evening. This morning you wake up feeling completely fine, with no symptoms at all. Your shift starts in an hour.

Stop, report, and do not push through

01
Stop handling open food
The moment you feel it coming on, step away from the food. Not at the end of service.
02
Tell your supervisor
They can cover the shift and decide what happens to food you have handled.
03
Go home and start the 48 hours
The clock starts when your symptoms stop, not when you left work.
Reporting it early protects the customers, the business, and you. Nobody has ever been thanked for finishing a shift and starting an outbreak.
One more thing to declare

Cuts get covered, and the dressing is blue and detectable

Blue

Almost no food is naturally blue. If the dressing comes off, it stands out against the food or the line and gets spotted instead of served.

Detectable

It holds a thin metal strip. If it ends up inside a product, a metal detector rejects that pack before it ever reaches a customer.

Waterproof, and reported

It stays on through wet work and seals the wound away from the food. Tell your supervisor about the injury too, so it is recorded.

The five things to remember

1Diarrhoea or vomiting means you must not handle open food
2Stay away from open food until 48 hours after your symptoms have completely stopped
3You can still spread the illness after you feel completely fine
4If you feel unwell during a shift, stop handling open food and report it straight away
5Cover cuts with a blue, waterproof, detectable dressing so it can be found if it comes off
