What You Will Be Able to Do

Listed in the TrustBite registry on completion

Every trainee who completes the course is added to the TrustBite registry of certified professionals, a public directory employers, auditors, and project leads use to verify credentials and find qualified people. The certificate keeps working for you after the course ends.

How It Works

What the Programme Covers

Eight modules, taught live and 1-on-1 in the order below. Every module is worked through on your own site, products and markets, so the examples are yours from the first session.

  1. 1

    BRCGS Food Safety Issue 9

The nine sections, the fundamental clauses, grading and the announced, unannounced and blended audit protocols.

  2. 2

What Issue 9 asks of the internal audit programme

Clause 3.4, scope, frequency, auditor competence and independence, and the documented inspection programme.

  3. 3

    Auditing skills

ISO 19011 principles, questioning, observing on the floor and sampling records without losing the thread.

  4. 4

Auditing management, HACCP and the quality system

Senior management commitment, the HACCP food safety plan and the food safety and quality management system.

  5. 5

    Auditing the factory floor

Site standards, product control and process control, from building fabric to foreign body detection and allergen management.

  6. 6

Auditing personnel and production risk zones

Training, hygiene and protective clothing, and the high risk, high care and ambient high care zone requirements.

  7. 7

    Nonconformities

Writing them clearly, grading minor, major and critical, and checking root cause and corrective action before closure.

  8. 8

A live internal audit of your own site

One section of your BRCGS system audited for real, with a report ready for your audit file.

The Regulations and Standards We Teach Against

  • BRCGSBRCGS Global Standard Food Safety Issue 9, its interpretation guideline, and ISO 19011:2018 for auditor practice.
  • GFSI schemesHow BRCGS grading and reporting compare with IFS Food Version 8, FSSC 22000 Version 6 and the SQF Food Safety Code.
  • EURegulations (EC) 178/2002 and 852/2004, the legal requirements the audit checks at an EU site.
  • UKThe Food Safety Act 1990, the Food Safety and Hygiene (England) Regulations 2013 and equivalents, and the Food Information Regulations 2014.
  • USFDA FSMA Preventive Controls (21 CFR Part 117) and USDA FSIS rules, for sites selling into the US.
  • CanadaThe Safe Food for Canadians Regulations and the preventive control plan.
  • Australia and New ZealandThe FSANZ Food Standards Code, Chapter 3.

How We Tailor It to You

We audit your own BRCGS system. You bring your procedures, HACCP plan and records, each session audits one section of your site, and the report from Module 8 goes straight into your internal audit schedule.
