Level 2 · Lesson 3

The seven
principles

HACCP is built on seven principles, always in the same order. They are not seven separate rules. They are one chain, where each link depends on the one before it.
The seven principles, in order
1
Conduct a hazard analysis
Work out what could go wrong at each step.
2
Determine the CCPs
Find the steps where control is essential.
3
Establish critical limits
Set the number that means safe, like a 75°C core.
4
Monitor each CCP
Check that each point stays within its limit.
5
Establish corrective action
Decide in advance what to do if a limit is missed.
6
Verify the system works
Check that the whole plan is working.
7
Keep records
Write it down, so you can prove all of the above.
A way to hold all seven

Seven principles, three simple jobs

Plan
Set the system up
1Find the hazards
2Find the critical points
3Set the safe limits
Run
Operate it day to day
4Monitor the points
5Fix problems when limits are missed
Prove
Show it works
6Verify the whole system
7Keep the records
If you remember nothing else, remember plan, run, prove. The seven principles fit inside those three jobs.
Why the order is fixed

Each one needs the answer from the one before

1 → 2
Can't pick control points until you know the hazards
2 → 3
Can't set a limit until you know the point it applies to
3 → 4
Can't monitor until you know the limit to check against
4 → 5
Can't plan a fix until you know what monitoring found
This is why the principles are always taught and applied in order. You cannot do step four without the answers from steps one, two and three.
